Itinerary Overview

Welcome reception and tasting meal at Massimiliano’s farm. Tour of the farm and evening dinner at the hotel.

Guided tour of a traditional family-run pasta factory, visit to a delicatessen for local cold cuts, cheeses and wine. Afternoon trip to the cities of Lucca and Pisa. Dinner at the best trattoria in town.

Day trip to Emilia-Romagna:
Morning tour of a Parmigiano Reggiano factory and prosciutto producer, lunch featuring meats and cheeses from the factory, followed by a guided tour and tasting at a traditional balsamic vinegar producer.

Back to Massimiliano’s farm for a pecorino and ricotta cheese-making workshop with the legendary shepherd “Il Pastore,” followed by a Tuscan cooking class with Donatella, Massimiliano’s mother.

Guided tour and tasting at a pecorino cheese dairy, wine tasting at a family-owned winery, and an afternoon charcuterie workshop with Salvatore the butcher.

The morning begins with a visit to a traditional dairy where Pecorino cheese is made.
Later in the day, we’ll tour Livorno’s iconic fish market, full of local bounty.
In the afternoon, we’ll head to Pisa to visit the Leaning Tower and explore lesser-known corners of this famous city.
Then, we will finish the retreat with a shared barbecue dinner at the hotel.

Farewell & Departure
We return home—with memories, skills, and flavors that will stay with us forever.
On the way to the airport, there will be time for one last shopping stop for premium Italian goodies.
